Yesterday I made myself roasted butternut squash – covered it in Almond oil, herbs, a little tabasco sauce and shook it in a container. They were great and now butternut squash is my new best friend.
After shaking for around 10-15 secondsĀ put them in the oven for around 20-30 minutes (lost track of time so I am not sure how long I left it in for) and took it out to eat – perfect.
Burnt the roof of my mouth and my tongue eating it while it was too hot of course which will teach me but they were really delicious.
This is what they looked like once they were cooked – I ended up eating all of them over a few hours but they are not so nice once they go cold!
They make a great warm snack or have them with salad and some oily fish for a healthy lunch as well
